About Desert Hives honey:

The honey from my bees is highly valued. In New Mexico, we don’t often see a large honey crop, and many hives yield little or no honey (this means honey in excess, that can safely be taken from the hive without starving the colony).

Honey is one of the three (olive oil and milk being the other two) most adulterated food products in the US. This drives down prices dramatically. Honey is often cut with corn syrup, rice syrup, and other sugary additives.

Honey is no longer the highly valued substance it once was and should be. Honey is an amazing food and medicine. Virgil wrote a long ode to the glory of bees and honey: "At last I will sing of the industrious people who gather honey, this sweet gift from heaven... "

Honey is a gift. If sold at its true value, very few people could afford it. When done properly, only the abundance from a hive is what is taken for our benefit and consumption—the rest enables the bees to survive winter.

The bees labored intensely to make the honey that’s in these jars. Each jar contains honey from a single hive, at a single time of the season.
