Frost Farm Honey

This honey has a story. Desert Hives has managed a hive at Frost Farms (near Santa Fe, NM) for about 4 years. Frost Farms provides high quality, unique produce for some of Santa Fe's restaurants. They also sell produce at the Madrid farmer's market on Tuesdays, and the Cerillos farmer’s market on Thursdays. These markets run from mid-May through mid-October from 4-6:30 PM. We are so grateful that this farm also provides our honey bees with a diverse and healthy diet!
This is the first time we have been able to harvest honey from this location! At Desert Hives, we are careful to harvest honey only when the honey bee's have honey in excess. Honey bee's store large amounts of honey to get through the months when floral resources are not available. Taking too much honey can cause a colony to starve; and taking too much honey and then replacing it with only sugar water (or other supplemental feeds) can take a toll on the honey bee's health.

In Bloom: Russian Olive, Tamarisk, Arugula Flowers, Sunflowers, Zinnias, Golden Rain Tree, Wild Mustard, and Dandelions
Tasting Notes: Not overly sweet, earthy, oaky, smooth, and a classic well-rounded honey flavor
